Smoked salmon is very healthy and so delicious. Pear, basil, tomatoes and shrimp are terrific with salmon.
All my recipes are for 2 servings!
- 8 oz (240 g) smoked salmon
- 1 cup (240 ml) sliced crispy lettuce
- 12 basil leaves
- 1 pear
- 10 mini tomatoes (plum or cherry)
- ½ cup (120 ml) blueberries
- 1/2 cup (120 ml) shrimp
- 1 teaspoon lemon pepper
- ½ lemon
- 4 twists from Pasta Rossa spice grinder
- Balsamic glaze
How to prepare:
If you use frozen shrimp, take the bag into room temperature 1-2 hours before you cook. Divide the lettuce slices and the basil leaves between two plates. Peel the pear, remove the hard inner part and seeds, and cut the pear into small pieces. Wash the tomatoes and cut them in half. Add the pear and the tomato on the plates. Add the shrimp on the plates.
Season everything with Pasta Rossa spice. If you do not have it, you can use 1 teaspoon of dried thyme or just add more lemon pepper than you see in the recipe.
Divide the blueberries between the two plates. Cut the salmon into big pieces and divide these between the plates. Season with lemon pepper. Cut the lemon into slices and the slices into halves. Add 1 or 2 on each plate.
Season the dish with balsamic glaze. I love the one with taste of figs and also the one with taste of Italian herbs.
