This lovely salad is a delicious choice for lunch. And it is healthy too!
All my recipes are for 2 servings!
- 1 cup (240 ml) sliced romaine lettuce
- 6 chicken inner fillets
- 1 tbsp sunflower oil
- 1/2 teaspoon salt
- 4 tbsp parmesan cheese flakes
- 12 basil leaves
- 8 olives
- 2 tbsp sun-dried tomato slices (from jar)
- 2 tbsp blueberry jam
- 2 teaspoons chili paste
- 2 teaspoons baby capers
How to prepare:
Wash the lettuce and cut it into slices. Divide these between two plates.
Slice the chicken inner fillets into 1/2″ pieces and cook these in oil on medium heat. Use a non-stick pan. Season with salt. Cook for 5 minutes and turn the pieces twice per minute. Divide the chicken between the plates. Add parmesan flakes, baby capers and basil leaves on both plates. Divide the olives between the plates. Add the sun-dried tomato slices. Season with chili paste and blueberry jam.
The mixture of spices and herbs makes this salad a delicious lunch!
