Karelian Meat Stew

My grandmother was from Karelia, a part of Finland that we had to give up after WW2 . This meat stew (hot pot) is a very traditional Finnish dish. This is my version of it, with traditional Finnish spices meeting Italian herbs, red wine and tomatoes.

Mushroom Garlic Pork

This dish is quite easy to do. There are many layers of juicy and spicy taste blending with each other in a fantastic way! All my recipes are for 2 servings! 3 medium sized potatoes 1 apple 4 oz (110 g) mushrooms from can/tin 1 teaspoon salt for the potatoes 1 teaspoon chili paste 3…

Hot And Healthy

This shrimp, tomato and feta salad is a wonderful choice for a side dish for chicken or steak dinner. It is as hot as you make it. 🙂
I use chili paste (by Spice Up) which is delicious but not too hot (like chipotle or cayenne).

Sunny Corn and Sweet Chili Chicken

Corn and chicken are wonderful together. Sweetness meets spices and herbs! Extra lovely flavor comes from mixing olives, orange, rosé pepper and basil leaves. This dish is healthy and very delicious. If you can find lingonberries, add them to the dish!

My Special Toast Skagen

This dish is based on a very traditional Scandinavian dish. Toast with shrimp mayonnaise. It was created by a popular Swedish restaurateur, Tore Wretman, just after the second world war and named after a fishing port in Denmark. I wanted to create something new and decided to add cucumber, chili, mango and blueberries.
