Chicken And Vegetables In The Oven


This dish is quite easy to do and it is delicious with hummus or rice!

All my recipes are for two servings.

If you cook for four people, you can double everything except the spices. With spices it is best to taste how much is needed. Always taste while you cook.

  • 4 tbsp sunflower or olive oil
  • 8 chicken drumsticks
  • 2 teaspoons chili paste (mild or hot)
  • 1 teaspoon minced garlic
  • 1 zucchini
  • 2 potatoes
  • 1 apple
  • 1 red onion
  • 8 large white mushrooms
  • 3 twists from the black pepper mill
  • 4 twists from Pasta Rossa spice grinder (or use lemon pepper)
  • 2 teaspoons Africa Rub (I use Nomu)

How to prepare:

Nomu African Rub is a wild mix of spices with cumin, coriander, pepper, chili, ajowan seeds, parsley, ginger, garlic, cardamom. If you cannot find it in a store near you, you can create your own mixture: mix dried cumin, dried chili, ginger powder and garlic powder (1/4 teaspoon of each).

Preheat the oven to 410 F (210 C). Take an oven pan and add the chicken drumsticks on it. Mix olive oil, minced garlic and chili paste. Drizzle this on the chicken. Cut the ends off the zucchini and cut the vegetable into 1” (25 mm) pieces. Add the pieces around the chicken.

Scrub the potatoes and cut them into quarters. Add on the oven pan. Toss lightly. Season with black pepper. Wash the apple and cut it into quarters. Discard the seeds. Add apple on the oven pan and season with Pasta Rossa spice. Peel the onion and cut it into quarters. Add these on the pan and toss once. Wash the mushrooms and dry them with a paper towel. Cut them in half and add on the oven pan. Season with Africa Rub and toss everything once.

Cook in the oven for 30 minutes. Divide everything between two plates.
