A delicious and lovely lunch dish. This dish is bursting with vitamins, color and fantastic flavors.
All my recipes are for 2 servings
- 1 cup (240 ml) peach slices
- 1 avocado
- 1/2 cup (120 ml) feta cheese
- 1 standard tomato
- 8 cherry tomatoes
- 10 sund dried cherry tomatoes
- 1 apple
- 10 basil leaves
- 4 teaspoons of green pesto
- 2 teaspoons of baby capers
- 2 tbsp parmesan flakes
- 2 teaspoons of dried Italian herbs
- 2 tbsp lemon juice
- 2 tbsp of olive oil
How to prepare:
Cut the avocado in half. Remove the stone. Use a spoon to get the avocado fruit off the skin and cut the fruit into chunks. Divide the avocado chunks and the peach slices between two plates. Add feta cheese on both plates. Wash and cut the tomato into wedges and the cherry tomatoes into halves. Add these on the plates.
Peel the apple and remove the hard inner part. Cut the apple into wedges and add on the plates. Add basil leaves, pesto, sun dired cherry tomatoes, baby capers and parmesan flakes.
Season with herbs, lemon juice and olive oil.
