If you love salmon dinner, this recipe is for you. A touch of bacon, blueberries and feta cheese makes the dish delicious.
All my recipes are for 2 servings
- 1 salmon fillet (7 oz / 200 g) skinless, pin-boned
- 3 tbsp olive oil
- 1 teaspoon salt
- 1 teaspoon lemon pepper (salt free)
- 1 lemon
- 4 slices of bacon
- 1/2 cup (120 ml) lettuce slices
- 10 cherry tomatoes
- 2 teaspoons dried thyme
- 1 teaspoon chili paste (medium hot)
- 1/2 cup (120 ml) feta cheese cubes
- 2 radishes
- 20 blueberries
How to prepare:
Wash the tomatoes, the radishes and the lettuce slices. Slice the radishes and cut the tomatoes in half. Divide these between two plates. Divide the feta cheese between the two plates. Season with 1 tbsp olive oil and dried thyme.
Cut the salmon fillet in half lengthwise. Take a non-stick pan and cook the salmon in 2 tbsp olive oil on medium heat for 3 minutes. Turn the fillets and cook for 2 more minutes. Season with salt and lemon pepper. Add the salmon on the salad.
Cut the lemon in half and squeeze the juice of half a lemon on the salmon. Season the salmon with chili paste for extra lovely taste. Cut the other half of the lemon into slices and decorate the dish.
Pan fry the bacon slices as crispy as you like them. Add two slices of bacon on each dish. Decorate with blueberries!
