Cured salmon is so healthy and very delicious. Together with potato, avocado, tomato, feta cheese and lovely spices and herbs this dish is a splendid choice for lunch or dinner. If you make this for dinner, add a little bit more potatoes, strawberries, feta or salmon.
All my recipes are for 2 servings!
- 2 potatoes
- 1 cup romaine lettuce, sliced
- 4 strawberries
- 10 basil leaves
- 4 tbsp feta cheese cubes
- 2 avocados
- 8 mini plum or cherry tomatoes
- 7 oz (200 g) cured salmon
- 1/2 lemon
- 2 teaspoons dill
- 2 spring onions
- 2 tbsp olive oil
- 4 twists from Pasta Rossa spice grinder
- 2 teaspoons Moroccan Rub spice
How to prepare:
You can find Morroccan Rub (by Nomu) online. I can highly recommend it. Pasta Rossa spice grinder is also available online. Both are found in the US and in Europe.
Peel the potatoes, cut them into wedges and cook them until they are soft.
Wash and cut the tomatoes in half. Wash the strawberries and cut them in half. Divide the lettuce slices between two plates. Add basil leaves, feta, strawberries and tomatoes. Season with olive oil and Pasta Rossa spice.
Cut the avocado in half, remove the stone and use a spoon to get the fruit off the skin. Cut the fruit into small pieces and add these on the salad. Season with lemon juice and Pasta Rossa.
Add the potato in the middle of the plates. Season with Moroccan Rub spice. Cut the cured salmon in half lengthwise and roll them. Add the rolls on the potatoes. Season with dill and Moroccan Rub spice. Wash the spring onion and cut into small slices. Sprinkle on the salmon. Enjoy!
