A juicy and lovely side dish. A great choice to enjoy with fish, steak or chicken.
All my recipes are for 2 servings
- 1/2 cup (120 ml) sweet corn from can / tin
- 1 avocado
- 1/2 cup (120 ml) blueberries
- 4 twists from Pasta Rossa spice grinder (or use dried tomato flakes)
- 1 teaspoon lemon pepper
- 1 lemon
How to prepare:
Cut the avocado in half. Remove the stone. Use a spoon to get the avocado fruit off the skin and cut the fruit into chunks. Divide the avocado chunks and the sweet corn between two plates.
Wash the tomatoes, cut them in half and add them on the plates with the blueberries.
Season with pasta rossa spice and lemon pepper.
Cut the lemon in half and drizzle the lemon juice on the salad.
