Delicious meatballs are wonderful with blueberries and strawberries. The herbs add extra lovely flavor to this healthy lunch dish.
All my recipes are for 2 servings!
If you cook for four, double the amount of the ingredients.
- 1 teaspoon soy sauce
- 1 small red onion
- 14 oz (400 gr) ground beef
- 3 tbsp olive oil
- 1 teaspoon chili paste (medium hot)
- 2 cloves of garlic
- 1/2 teaspoon salt
- 2 teaspoons African Rub (or another spice which you love)
- 3 tbsp water
- ½ cup (120 ml) low-fat cream
- 40 blueberries
- 10 strawberries
- Balsamic glaze
How to prepare:
Peel and chop the onion and the garlic cloves. Mix soy sauce, chopped onion with ground beef and season with chili and garlic. Divide the mixture into 4 pieces so it is easier to do the meatballs. Take pieces of the meat mixture and roll into a meatball. You can decide the size of the meatballs. For this recipe it is best to do meatballs which are 1,5” in diameter.
Take a non-stick pan and heat it up to medium heat. Add the olive oil. Then add the meatballs. You might need to cook the meatballs in two parts, depending on the size of your pan.
Cook the meatballs for 6 minutes. Turn them once a minute. Lower the heat to medium low. Sprinkle salt on the meatballs and then Africa Rub (or use black pepper, roasted garlic & pepper or dried Italian herbs). Add the water and cook the meatballs for 3 minutes. Turn the meatballs once. Add the cream and cook for 3 more minutes.
Divide the meatballs between two plates. Add basil leaves around the meatballs. Season with balsamic glaze. Cut the strawberries in half. Add blueberries and strawberries on top of and around the meatballs.
