This is a wonderful, juicy side dish for steaks and chicken. Very healthy, and very delicious!
All my recipes are for two servings.
- 20 arugula leaves
- 10 basil leaves
- 3 radishes
- 1 small red onion
- 10 mini plum tomatoes (or cherry tomatoes)
- 8 olives
- 2 carrots
- 4 tbsp blueberries
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 3 twists from the Pasta Rossa pepper grinder
How to prepare:
Wash the arugula leaves, basil leaves, radishes, tomatoes and carrots.
Divide the arugula leaves between to plates. Add basil leaves on top. Cut the radishes into thin slices and add on the basil. Peel and cut the onion into thin slices and add these on the salad. Cut the tomatoes in half and add them on top of the onion slices. Slice the carrot thinly and add them in the middle of the lovely salad. Decorate with blueberries for extra taste, vitamins and antioxidants.
Season with olive oil, vinegar and 3 twists from the Pasta Rossa pepper mix grinder.
