If you love salmon, vegetables and blueberries, this dish is for you. This dish has tons of flavor and lots of vitamins. The ingredient list is a bit longer than usually, so choose to follow this recipe, or leave out something which you do not like or have at home.
All my recipes are for two servings.
- 10 small (summer) potatoes
- 10 white or brown mushrooms
- 1 carrot
- 1 red onion
- ½ zucchini
- 2 tbsp olive oil
- 6 twists from your black pepper mill
- 1 teaspoon minced garlic
- 1 teaspoon dried tarragon
- 8 oz (225 g) salmon fillet without skin
- 1 tbsp sunflower oil
- ½ teaspoon salt for the fish
- 3 twists from your black pepper mill
- 2 twists from Pasta Rossa grinder
- 1 avocado
- 4 radishes
- 2 tbsp blueberries
- 1 lemon
- Dill for decoration
How to prepare:
Try to get Pasta Rossa mixture. If you cannot find it, make your own mixture. Mix half teaspoon of each: garlic pepper, tomato powder and black pepper.
Heat up the oven to 410 F (210 C). Wash and scrub the potatoes and the carrot. Wash the zucchini and the mushrooms. Cut small summer potatoes in half, the carrot into ½” pieces, the onion into slices and the mushrooms into halves (unless they are small). Take a non-stick oven pan. Add all the vegetables and the potatoes on the pan. Drizzle with olive oil. Season with a pinch of salt, black pepper, minced garlic and tarragon. Put the pan in the oven. It takes only 18 minutes for this dish to cook.
Cut the salmon fillet into 3 slices. Heat up a non-stick pan and cook the salmon in oil 3 minutes on each side. If the salmon is very thick, cook also the sides for 1 minute. Season with salt, black pepper and pasta rossa.
Cut the avocado in half, remove the stone and take the fruit off the skin with a spoon. Mash the avocado with a fork. Add 2 teaspoons of lemon juice (save rest of the lemon for the last touch to this dish). You can season the avocado with pasta rossa or with chili powder.
Wash the radishes and cut them into thin slices.
Divide the oven items between two plates. Add salmon in the middle. Add radish slices. Decorate with mashed avocado and lovely blueberries for extra taste and vitamins. Add dill if you have some at home. Drizzle lemon juice on everything.
