This salad is so juicy and tasty. I decided to mix avocado with honeydew melon. For balance I added prosciutto and cashew. The lovely, slightly salty dried ham and the nuts are perfect with fruit. For a wonderful extra taste I added my favs… green pesto, sun-dried tomatoes, basil leaves and figs balsamic glaze.
This salad is so easy to do. And yet so yummy and full of flavor and vitamins.
If you cannot find delicious Italian prosciutto, choose your favorite ham. You can also add strawberries to this salad.
All my recipes are for 2 servings!
- 1 avocado
- 1 honeydew melon
- 4 slices of prosciutto (an Italian dry-cured ham that is thinly sliced)
- 12 basil leaves
- 1/2 cup (60 ml) cashew nuts
- 1 teaspoon dried thyme
- 1 teaspoon lemon pepper
- 10-16 sliced sun-dried tomatoes (from a jar with oil)
- 2 teaspoons green pesto
- 1 tbsp figs balsamic glaze (Mussini or another great brand)
How to prepare:
Cut the avocado in half. Use a spoon to remove the stone and to get the lovely fruit flesh off the skin. Cut the avocado into 1″ (25 mm) pieces. Cut the melon in half and then again in half. Remove the seeds. Cut the melon into 1″ (25 mm) wide slices, then cut off the hard skin. Cut the slices into small pieces. (Or do the way you usually do). Divide the avocado and the melon between two plates. Sprinkle thyme and lemon pepper on the avocado. Cut the prosciutto into any kind of slices you like, small or big. Add the ham to the salad. Add the lovely basil leaves. Basil tastes so good.
Sprinkle cashew nuts on the salad. (If you are allergic to nuts, do not add them. You can add a few olives instead). Decorate with sun-dried tomato slices, which give this dish a lovely tense sweet-tart flavor. Add green pesto for color and flavor. (Pesto is made of basil, parmesan and olive oil, added with pine nuts, and sometimes also garlic). I use Sacla brand. Choose any brand you can find in your store. To make this salad extra wonderful, add balsamic glaze on the salad. I love figs and raspberry balsamic glaze. To this salad I recommend the figs balsamic glaze.
Honeydew melon, or honeymelon, is a fruit that belongs to the melon species cucumis melo. The sweet flesh of honeydew is typically light green, while its skin has a white-yellow tone. A few benefits of honeydew melon: Rich in nutrients (vitamin C, potassium, vitamin B6). Contains compounds with strong antioxidant capacity, including beta-carotene (pro-vitamin A).
