In Scandinavia we love to eat seafood.
Cured salmon, shrimp (mixed with mayonnaise and chopped mild onion), cherry tomatoes and lemon balm leaves are delicious together.
You can make cured salmon yourself (there is a recipe here on my blog) or you can buy ready made cured salmon. Cut the salmon into bite-size pieces.
Mix shrimp of your choice with mayonnaise (low-fat mayonnaise is the best choice) and a little bit of chopped onion (mild onion is the best choice).
Cut cherry tomatoes in half.
Mix all tasty ingredients on a plate and garnish with lemon balm leaves.
Sprinkle fresh or dried dill, lemon pepper and dried chives on the dish to enhance the flavor.
