Cured salmon is so healthy and tasty. Cured salmon (which we call grav lax in the Nordics and graavi lohi in Finnish) is fresh, raw salmon covered with sea salt, sugar and dill. Here is the recipe I use.
Salmon soup is so good and very healthy too. This one has a touch of chili, so it is lightly spicy, and very delicious. If you do not want to add chili, you can leave it out. As always, taste while cooking, as that is the only way to learn what you love the most. Be brave in the kitchen and have fun!
This dish is based on a very traditional Scandinavian dish. Toast with shrimp mayonnaise. It was created by a popular Swedish restaurateur, Tore Wretman, just after the second world war and named after a fishing port in Denmark. I wanted to create something new and decided to add cucumber, chili, mango and blueberries.
