A healthy and tasty light lunch or a side dish for chicken, fish and steak.
All my recipes are for 2 servings
- 1 cup crispy lettuce of your choice
- 1 avocado
- 1 lemon
- 1 small can (tin) of sweet corn
- 20 arugula leaves
- 2 tbsp olive oil
- 12 basil leaves
- 6 radishes
- 1 small onion
- 1 teaspoon lemon pepper (salt free)
- 1 teaspoon crushed spices (for example dried tomato, dried chili, dried garlic and black pepper mixture)
- Balsamic glaze
How to prepare:
Cut the lettuce into slices. Cut one lemon in half. Cut the avocado lengthwise and remove the stone. Use a spoon to get the avocado off the skin and cut the avocado into slices. Peel the onion and cut it into slices. Cut the radishes into slices.
Divide the lettuce and avocado slices between two plates. Add onion rings and radish slices on both plates. Drizzle with lemon juice and olive oil. Add corn and arugula leaves on both plates. Season with lemon pepper and your choice of crushed spices. Divide the basil leaves between the plates. Drizzle balsamic glaze on the salad.
