Blueberry Meatballs With Oven Vegetables

Meatballs are always delicious. Mix them with oven vegetables and decorate with lovely berries, and you can enjoy an exotic and delicious dinner.

All my recipes are for 2 servings!

If you cook for four, double the amount of the ingredients.

  • 6 potatoes
  • 1 carrot
  • 1/2 cup of mushrooms
  • 1/2 cup water
  • 1 teaspoon salt
  • 6 cherry tomatoes
  • 2 cloves of garlic
  • 2 teaspoons soy sauce
  • 14 oz (400 gr) ground beef
  • 3 tbsp olive oil
  • 1 teaspoon chili paste (medium hot)
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed black pepper
  • 1/2 teaspoon cinnamon powder
  • 4 tbsp water
  • ½ cup (120 ml) low-fat cream
  • 2 tablespoons lingonberries
  • 20 blueberries

How to prepare:

Heat up the oven to 400F (200C).

Peel the potatoes and the carrot. Cut the potatoes into pieces (1-1,5 inches). Cut the hard part off the carrot (thow that away) and cut the carrot into slices (1/2 inches thick).
Cut the tomatoes in half.

Take an oven pan and wipe it with oil. Add the potatoes, mushrooms and the carrot. Season with salt. Put the pan in the oven for 25 minutes. Add 1/4 cup of water after the first 10 minutes.

Peel and chop the the garlic cloves. Mix soy sauce with ground beef and season with chili and garlic. Divide the mixture into 12-14 pieces with a knife. Take the pieces and roll them into balls.

Take a non-stick pan and heat it up to medium heat. Add the olive oil. Add the meatballs. You might need to cook the meatballs in two parts, depending on the size of your pan.

Cook the meatballs for 5-6 minutes. Turn them once a minute. Lower the heat to medium low. Sprinkle salt and cinnamon on the meatballs and also black pepper. Add the water and cook the meatballs for 2 minutes. Turn the meatballs once. Add the cream and cook for 3 more minutes. Stir once.

Take the vegetables from the oven. Add the cherry tomato halves and mix everything lightly. Divide the vegetables between two plates and then add the meatballs on the plates. Decorate with lingonberries and blueberries. If you do not have any berries (fresh or frozen), no worries. The dish is wonderful even without the berries.
