A juicy and lovely side dish. A great choice to enjoy with fish, steak or chicken.
All my recipes are for 2 servings
- 1/2 cup (120 ml) peach slices
- 1 avocado
- 1 cup of lettuce slices (romaine or cosmopolitan are great choices)
- 4 twists from Pasta Rossa spice grinder (or use 1/3 teaspoon of crushed red pepper)
- 1 teaspoon lemon pepper
- 10 cherry tomatoes
- 2 scallions
- 1 lemon
- 2 teaspoons of olive oil
How to prepare:
Wash the lettuce and cut into slices. Divide these between two plates. Cut the avocado in half. Remove the stone. Use a spoon to get the avocado fruit off the skin and cut the fruit into chunks. Divide the avocado chunks and the peach slices between two plates.
Wash the tomatoes, cut them in half and add them on the plates. Wash the scallions and cut them into slices and add them on the salad. Season with olive oil, Pasta Rossa spice and lemon pepper.
Cut the lemon in half and drizzle the lemon juice on the salad.
