Avocado, Carrot, Olives and Honey

This dish is wonderful with chicken or fish. And this one is so easy to do!

All my recipes are for 2 servings

  • 1 cup (240 ml) lettuce of your choice
  • 2 avocados
  • 8 small tomatoes (cherry or mini plum)
  • 1 carrot
  • 8 olives (green or black)
  • 1/2 cucumber
  • 2 tbsp honey
  • 12 arugula leaves
  • 1 lemon
  • 2 tbsp olive oil
  • 10 basil leaves

How to prepare:

Wash and slice the lettuce. Divide the slices between two plates. Cut the avocado in half, remove the stone, and use a spoon to get the avocado off the skin, then slice the avocado. Wash the tomatoes and cut into halves. Wash the cucumber and peel the carrot. Grate the carrot. Add it on the lettuce. Cut the cucumber into ΒΌ-inch (6 mm) slices. Add avocado, tomato, cucumber and the olives on top of the lettuce slices. Pour honey on the salad. Add the arugula leaves. The combination of honey and arugula is heavenly. Mix olive oil and juice of half a lemon. Pour the oil mixture over the salad. Slice the rest of the lemon in slices. Decorate the salad with lemon slices and lovely basil leaves.
