This juicy and fresh salad is full of vitamins and delicious taste! If you cannot find blueberries, add blackberries. You can also use less berries and add nuts for protein.
All my recipes are for 2 servings.
- 14 arugula leaves
- ½ cucumber
- 14 cherry tomatoes
- 8 oz (220 g) feta cheese cubes
- 8 oz (220 g) pineapple chunks
- 2 tbsp juice from the pineapple can (or 2 tbsp orange juice)
- 12 big strawberries
- 12 olives
- ½ cup (120 ml) wild blueberries
How to prepare:
Wash the arugula and divide the leaves between two plates. Peel the cucumber and cut into small pieces. Cut the tomatoes in halves. Add these on the arugula leaves. Add the feta cubes and the juicy pineapple chunks on the salad. Sprinkle fruit juice on the salad.
Cut the strawberries in halves and add to the salad with the olives. You can choose black or green olives. Decorate with lovely wild blueberries.
Tip: If you are very hungry, have a piece of fresh bread. Top the bread with low-fat cream cheese or with cold cuts and tomatoes.
