Chicken Broccoli Peas And Rice

This healthy and yummy meal is quite easy to do.

All my recipes are for 2 people.

  • 4 chicken tenders (tenderloin/inner fillet)
  • 3 tbsp olive oil for the chicken
  • 1/2 tsp curcumin powder (turmeric)
  • 1/4 tsp salt for the chicken
  • 1/2 tsp dried tarragon
  • 1/2 tsp ground black pepper
  • 1 cup cooking cream
  • 1 cup rice (basmati or brown)
  • 1/4 tsp salt for the rice
  • 1 cup broccoli florets
  • 1/2 cup cauliflower florets
  • 1/2 tsp garlic pepper for the florets
  • 1/4 cup frozen peas
  • 2 cherry tomatoes (or similar)

How to prepare:

Cook rice (according to the instructions on the package). Cook broccoli florets and cauliflower florets for 7 minutes. Throw the frozen peas into the broccoli pot for the last 3 minutes.

Cut the chicken tenders (tenderloin / inner fillet) into 1 inch (25 mm) pieces.

Cook the chicken in a pan in olive oil, while the rice and broccoli cook. Cook on medium heat for 4 minutes. Stir occasionally. Season the chicken with salt, ground black pepper, dried tarragon and curcumin (turmeric). Add cooking cream and let simmer for 1 minute on medium low heat.

Slice the small tomatoes.

Divide the cooked rice between two plates. Put the peas in a separate small bowl. Mash the broccoli and the cauliflower in the pot and season with garlic pepper. Divide the mashed florets between the plates. Pour chicken sauce on the rice. Garnish with a few tomato slices and the peas.
