Cured salmon is something we enjoy during Christmas in Finland. It is healthy and tasty. Cured salmon, which we call grav lax in the Nordics and graavi lohi in Finnish, is fresh, raw salmon covered with sea salt, sugar and dill. After 24 hours you scrape off the salt and dill. It was created by a popular Swedish restaurateur, Tore Wretman, just after the second world war and named after a fishing port in Denmark. I wanted to create something new and decided to add cucumber, chili, mango and blueberries.
