Avocado is so healthy and also so tasty. This salad is a great choice for a light lunch any day of the week. If you want a larger lunch (this dish has only 370 calories) add more avocado or add one egg to each plate!
For two:
If you use frozen prawns, defroze them for a few hours in room temperature.
Peel and cut one avocado into small pieces. Divide these between two plates. Season the avocado with tasty green pesto. Add 6-8 small tomatoes per plate (mini plum or cherry tomatoes are great).
Cut the prawns in half and add prawns on both plates. You need 14-20 prawns for two salads. Add a few olives (green or black) on the plates and garnish with basil leaves. Basil smells and tastes so good, and is filled with vitamins and antioxidants.
Sprinkle lemon juice, lemon pepper and dried thyme on the salads.
