Watercress Salad

A colorful, healthy and delicious salad is always a good idea. Enjoy this side dish with warm vegetables, chicken or lean meat and you have a tasty lunch or dinner.

All my recipes are for 2 servings

  • 1 cup chopped crispy lettuce
  • 4 tbsp extra virgin olive oil
  • 16 cherry tomatoes
  • Watercress leaves (as many as you like)
  • 1/2 cup feta cheese cubes (try a brand with oil and spices or herbs)
  • 6-8 green olives
  • Pea sprouts (as many as you like)
  • 12-14 slices of cucumber
  • 4 garlic cloves
  • Optional: 4 tbsp lemon juice

How to prepare:

Divide the chopped lettuce between two plates. Season with olive oil. Cut the cherry tomatoes in half and divide these between the plates. Add sliced cucumber on the plates.

Divide the feta cheese cubes between the plates and add watercress and pea sprouts on both salads. If you can’t find these herbs, you can use any herb you like! Try basil, thai basil, lemon balm or mint leaves. Peel the garlic cloves and add two on each salad.

If you love lemon juice and have some at home, sprinkle some on the salads.
